Bambuza Vietnam Bistro Opens New Restaurant

Husband and wife team bring their family recipes and Vietnamese flavor to Tanasbourne

 


Portland, Oregon (April 20, 2011) - On Tuesday, May 3, 2011, Portland’s family-owned and operated Bambuza Vietnam Bistro will open up a new location - this one will be in Tanasbourne, Oregon.

“There’s nothing we love doing more than introducing people to the flavors and dishes we grew up with,” says Daniel Nguyen, co-owner of Bambuza Vietnam Bistro, who runs the restaurants with his wife and chef Katherine Lam.

“We do made-from-scratch Vietnamese cooking that is approachable and authentic to our region,” adds Katherine Lam. “Portlanders have been incredibly supportive to us and our business, and we’re so proud to have the opportunity to grow our business here,” Lam continues.

The Food

Bambuza Vietnam Bistro serves modern Vietnamese food, based on family recipes. The menu reflects what Daniel and Katherine enjoyed growing up, but also incorporates new dishes that inspire them during their annual visits to Vietnam. A self-taught chef, Katherine Lam heads the kitchen and it’s her energy and knack for developing flavor that makes these Vietnamese restaurants so successful, and keeps diners coming back for more. You’ll notice it in the details – the surprising extra crunch in the salad rolls from the addition of fried, hand-rolled wontons, fresh asparagus or sautéed jicama. Then there are the layers of flavor in the beef pho – a testament to their made-from-scratch philosophy – that is achieved by simmering the beef bones for hours to make a stock rich in flavor. About Bambuza

In 2002, Daniel Nguyen and his mother and longtime cook Lan Quach founded Bambuza Vietnam Bistro in Seattle, WA, after deciding that they wanted to start an authentic Vietnamese restaurant together inspired by family recipes. Since then, Lan Quach – who grew up in Rach-Gia, Vietnam and is a part of one of the first Vietnamese families to relocate to Portland after the Vietnam war in 1975 – and Katherine Lam – who is from Bien-Hoa, Vietnam – have been refining those original recipes and developing their own with a made-from-scratch philosophy. Once Bambuza Seattle was off the ground, Katherine was excited to move back to Portland to be closer to her family. In 2008, the couple opened their second location at Portland’s South Waterfront district and a year later, one in Tualatin. When Lan Quach retired in 2010, Daniel and Katherine sold the restaurant in Seattle to focus solely on their Portland properties.

Bambuza Tanasbourne will open May 3 at 19300 NW Cornell Rd. Hillsboro, OR 97124. Hours are Monday – Saturday from 11 a.m. to9 p.m. for lunch & dinner.
